Quinoa Pomegranate Power Oats

What a person eats for breakfast sets the tone for the entire day. Rather than kicking things off with coffee and an empty stomach, try something more nutritious and fulfilling. Packed with hearty oats and quinoa, this power bowl will help you sustain energy throughout the morning. Plus, its delicious and easy to make ahead of time!

Serves 1-2

Ingredients:
  • 1⁄4 cup quinoa
  • 1⁄4 cup steel cut oats
  • 1⁄3 cup milk or milk substitute
  • 1⁄3 cup water
  • 1⁄4 teaspoon ground cinnamon
  • 1/2 tsp. ginger powder
  • 1 Tbsp. ground flax seed
  • 1 Tbsp. raw honey
  • 3 Tbsp. sliced almonds
  • 1⁄4 cup fresh pomegranate seeds
  • 1 handful fresh raspberries
Directions:

Rinse quinoa. In a saucepan, stir together the milk (or milk substitute) and powdered ingredients, setting ground flax seed aside. Bring to the boil, reduce heat and cook 10-15 minutes, or until al dente. Drain in a fine mesh colander. Cook oatmeal according to package directions.  Combine oatmeal and quinoa, then stir in honey, ground flax seed and top with almond slices, whole raspberries and pomegranate seeds. Enjoy!
