The Breakfast (or Lunch) of Champions

Eating healthy doesn’t have to be bland. In fact, with the right recipe, it can seem downright indulgent! With just a few simple ingredients and a hearty bread of your choice, preparing a nutritious, delicious, satisfying meal is easier than ever!


  • 1 ripe avocado
  • 1/2 a lemon, juiced
  • Dash of coarse sea salt
  • 2 slices of bread, toasted
  • Red pepper flakes
  • Extra-virgin olive oil, drizzled

Cut the avocado in half, remove pit, and scoop out one half into a medium-sized bowl. Add the lemon juice and sea salt to taste. Mash the ingredients together with a fork, until mixture is slightly chunky. Spread the mixture onto each piece of toast and garnish with red pepper flakes, a drizzle of olive oil, and sea salt if desired. Serve immediately.

Feeling creative? When it comes to avocado toast, the possibilities are truly endless. Add a dollop of cottage cheese, a sliced hard-boiled egg, a sprinkle of turmeric, fresh veggies, or even a few sprigs of your favorite herb. Enjoy!
